Join Ant (the butcher) and Ben (the knife) on this nose to tail journey. The class will cover the butchery of a whole pig whilst exploring the various cuts and what to do with them.

You will learn the art of authentic offset smoker, master the Blok fire cage and table grill, whilst getting to know how to navigate the intricacies of a whole pig, head and all!

For safety reasons, there will be a brief before we get started, with some housekeeping, including fire safety, fire exits and general diligence to ensure everyone is safe and prepared in case of an accident.


We will provide a waiver that ensures you know the apparent dangers of working around fire and kitchen equipment, including knives. Only people who have completed the waiver will be able to get hands-on. You can, of course, sit, relax, and watch if you would rather.


We will be working inside and outside of Blok HQ's workshop, albeit around a warm fire. It will still be cold, so please come prepared for all scenarios. We are cooking undercover, but it is always best to be prepared.


I will provide Aprons, knives, and all the kit needed for the day, but if you have a set of knives you love to use, please bring them along and be diligent while travelling.


I would love to welcome you 10 minutes earlier so we can start promptly, but please be aware that we can't wait for anyone struggling for time.


All the kit being used on the day will be made here at Blok HQ. Please bring any notepads, or feel free to film or take notes on your phone... ask as many questions as you can so you can get the most out of the day.

We will eat together everything we have cooked as a team, there is a local micro brewery and pub a stones throw away [literally] so if anyone fancies a drop after, fill your boots!
